With back to school around the corner, I wanted to share one of my favourite Indian snacks- Matri. This is a simple yet super tasty snack that is sure to be a lunch box winner! INGREDIENTS
- 1 cup All Purpose Flour
- 4-5 tbsp Rice Bran Oil or Ghee
- 1 tsp Ajwain seeds, Carom seeds or any dried herbs
- Salt to taste (1/2 tsp)
- Lukewarm water
- Rice Bran Oil for deep frying (or any preferred oil)
DIRECTIONS
- Mix flour, ajwain seeds (or herbs) and salt into a bowl
- Add 4-5 tbsp of oil or ghee to mixture and mix with your fingers until crumbly. Slowly add water in small increments and knead into a firm dough (add 2-4 tbsp each time)
- Cover with muslin cloth and rest for 20 mins
- Knead again for a minute and then divide dough into small ~4cm diameter balls. Use rolling pin to flatten each ball so they are a flat circular biscuit shape, ~1cm thick. No need for them to be perfectly shaped!
- Make 8-10 fork pricks on each matri to prevent puffing when frying
- Deep fry 5-6 circles at a time (depending on size of frying pan) for 5-7 mins until golden brown on both sides.
- Drain from oil and let cool. Enjoy!
- Store in air-tight container for ~20-30 days
