Hello! Thank you so much for visiting Zista ? I launched Zista in early 2020 as my way of sharing my beautiful Indian culture – a culture filled with beauty, colour & fun. With back to school around the corner, I wanted to share one of my favourite Indian snacks- Matri. This is a simple yet super tasty snack that is sure to be a lunch box winner! INGREDIENTS

  • 1 cup All Purpose Flour
  • 4-5 tbsp Rice Bran Oil or Ghee
  • 1 tsp Ajwain seeds, Carom seeds or any dried herbs
  • Salt to taste (1/2 tsp)
  • Lukewarm water
  • Rice Bran Oil for deep frying (or any preferred oil)

DIRECTIONS

  • Mix flour, ajwain seeds (or herbs) and salt into a bowl
  • Add 4-5 tbsp of oil or ghee to mixture and mix with your fingers until crumbly. Slowly add water in small increments and knead into a firm dough (add 2-4 tbsp each time)
  • Cover with muslin cloth and rest for 20 mins
  • Knead again for a minute and then divide dough into small ~4cm diameter balls. Use rolling pin to flatten each ball so they are a flat circular biscuit shape, ~1cm thick. No need for them to be perfectly shaped!
  • Make 8-10 fork pricks on each matri to prevent puffing when frying
  • Deep fry 5-6 circles at a time (depending on size of frying pan) for 5-7 mins until golden brown on both sides.
  • Drain from oil and let cool. Enjoy!
  • Store in air-tight container for ~20-30 days
