One of the most important aspects to Indian culture is of course food!! No occasion, wedding, event, ritual or festival is ever complete without a decadent display of food. So today I am sharing one of my favourite dinner recipes – Aloo Gobi! You can pretty much though substitute the vegetables with any other preferred vegetables or protein. INGREDIENTS

  • 2 tbsp Vegetable oil or Ghee
  • 1/4 tsp cumin seeds
  • 1-2 large onions, diced
  • 2 cloves garlic, finely chopped
  • 1 tbsp minced/grated ginger
  • 1-2 tomatoes, finely diced
  • 1 green chilli diced (optional)
  • 1 tsp garam masala
  • 1/2 tsp turmeric powder
  • Salt
  • 1 medium sized cauliflower, cut into florets
  • 2-3 medium sized potatoes, peeled & washed
  • Freshly chopped coriander, for garnish

DIRECTIONS

  • Wash and dry the cauliflower thoroughly before starting to cook
  • In a deep pot over medium-high heat, add oil. Add cumin until fragrant.
  • Add chopped onions and saute until lightly golden brown. Add ginger and garlic and saute for another 2-3 mins.
  • Add tomatoes & chilli, cook until soft
  • Add garam masala and turmeric and cook until toasted, about 1-2 mins
  • Add potatoes first, mix through and cook for approx. 2-3 mins.
  • Add cauliflower, mix through and let simmer/cook on a low-med heat until soft. Add salt to taste (approx. 2 tsp)
  • Garnish with coriander and serve with fresh chappati, rice or naan. Enjoy!
